This 11 Year-Old Limited Edition Single Pot Still Whiskey, created by Paddy Foley, was matured in Pedro Ximenez casks, developing rich, velvety layers of dark fruits, caramel sweetness and classic pot still spices of clove and ginger with a hint of orange zest. Dingle Distillery crafts whiskey by hand, guided by patience, integrity and a deep sense of place.

Tasting Notes

Nose: Rich aromas of cooked dates and raisins intertwine with burnt caramel and maple syrup.

Palette: Velvety and mouth-coating, unfolding layers of sultanas, sticky dates, and chocolate-coated cherries, balanced by a drizzle of golden honey.

Finish: Lingering and warming, with charred oak and classic pot still spices of clove and ginger, lifted by a bright hint of orange zest.
