A blend of pot still and grain Irish whiskeys finished the Old Comber was in port and sherry casks.

Tasting Notes:
Soft orchard fruits, red applies, over-ripe pears and red apple skins lead to baked plum pudding, vanilla creme anglaise and a hint of warming nutmeg.

Big, full bodied and soft on the palate. Initial notes of red berry and madeira cake trifle laced with sherry and vanilla pods, then baked plums in red wine and fresh cinnamon sticks. Red toffee apple and a sweetness from the grain and the port casks that gently infuses everything. All held together by soft wood tannin, toasted almonds and mild winter spices.

Long, lingering, viscous and satisfying. Cream soda from the Echlinville pot still transforms in to iced raspberry and cherry Bakewell tart. Then fading gradually to a final gentle hint of warm spiced ginger cake and vanilla cream.
