Dingle Single Pot Still is shaped by Irish tradition yet defined by the individuality of its home on the Atlantic coast. The process begins in wooden mash tun, where locally sourced malted and unmalted barley are combined in the classic pot still style. This foundation creates a spirit that is uniquely Irish and unmistakably Dingle. Maturation follows in a marriage of Bourbon, Oloroso, Pedro Ximénez Sherry, and Red Wine casks, each bringing its own depth and complexity. Influenced by Dingle’s microclimate, the whiskey evolves with patience and care, becoming a reflection of both craft and community. Hand-crafted and distinctive, it embodies the resilience and character of the place it comes from.

Taste: Velvety notes of cooked dark fruits, brown sugar, and spiced stewed apples
